Ingredients

Donut cake has a simple ingredient list, so it’s important that you use high-quality ingredients for the best flavor and texture. Because of this, I recommend you use vanilla bean paste if you can find it! If not, substitute with pure vanilla extract.

For the Cake:

Unsalted Butter (Softened): Provides richness and flavor to the cake, and softening it helps it blend together well with the sugar.

Vegetable Oil: Adds moisture to the donut cake and also keeps it nice and tender.

Granulated Sugar: For that perfect donut flavor!

Donut cake is so easy to make, no special cooking methods required! Just mix up that batter, pop it in the oven, and then top it off with your 3-ingredient glaze!

Preheat Oven, Prepare Bundt Pan: Preheat the oven to 350 degrees fahrenheit. Spray a 10-cup bundt pan well with pan spray, preferably with a pan spray that contains flour such as Baker’s Joy. If any spray pools in the bottom of the pan, blot it out with a paper towel.

Butter Mixture: Add the butter, oil, and sugar to the bowl of a stand mixer and beat on medium-high for 2-3 minutes, until pale and fluffy. Scrape down the sides and bottom of the bowl as needed to ensure everything is evenly incorporated.

Mix in Eggs and Vanilla: Add the eggs and vanilla bean paste and mix until incorporated.

Mix Wet and Dry Ingredients Separately: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Whisk together the buttermilk and sour cream in a separate bowl.

Combine: Add the dry ingredients and buttermilk mixture to the wet ingredients alternating the two. Scrape down the sides and bottom of the bowl as needed, until completely combined.

Baking and Adding Frosting

Bake: Pour the batter into the prepared bundt pan and bake for 40-45 minutes, or until a toothpick comes out clean from the center.

Cool and Flip: Let the cake cool in the pan for 5-10 minutes before inverting on a cooling rack. Flip it once more so what is normally the bottom of a bundt cake is facing up and becomes the top of the cake. Let it cool this way, so it doesn’t flatten out on the cooling rack.

Prepare Glaze: When the cake is cooled, prepare the glaze by whisking the powdered sugar, milk, and vanilla together until smooth. Pour over the top of the cake, letting it drip down the sides. You may thin the glaze down by adding an additional tablespoon or two of milk if you prefer a thinner glaze.

Tips and Variations

Add 1 teaspoon of almond extract for a little bit of a sugar cookie flavor in your cake.

The sour cream can be replaced with plain greek yogurt if desired.

Make a chocolate icing by pouring 1/3 cup steaming heavy cream over 1 cup of chocolate chips. Let the chocolate sit for at least 2 minutes before whisking it together until smooth and pouring over the cooled cake.

If you do not have a pan spray with flour in it, spray the bundt pan with regular pan spray and dust it with flour, tapping out the excess.

Storing Leftovers

Store leftover cake in an airtight container at room temperature for up to 5 days.

To freeze the cake, it’s best sliced first. Lay the individual slices on a parchment-lined baking sheet and place it in the freezer until the slices are completely frozen. Place the slices in a large freezer ziplock and keep in the freezer for up to 3 months. Remove the slices as desired and let them thaw for an hour or so at room temperature.

The cake without icing cake be frozen as a whole. Place the cake on a parchment-lined baking sheet and place the pan in the freezer for 2 hours. Wrap the frozen cake tightly in 2-3 layers of plastic wrap, followed by a layer of foil. Freeze for up to 3 months. Let the cake thaw for 3-4 hours at room temperature, or overnight in the refrigerator before icing an serving.

What is Spinach Pie?

Spinach pie is similar to classic Greek spanakopita. The difference is the crust, and you will love both versions! Spanikopita uses flakey fillo dough, and spinach pie is baked in a traditional pie crust. Spinach pie is savory and creamy and bursting with cheesy flavors. My recipe uses ricotta cheese, feta cheese, and parmesan cheese. Triple the cheese, making it 3 times as delicious! This spinach pie is so versatile and can be served for breakfast, lunch, or dinner. It’s also tasty warm or cold, so enjoy it anytime, anywhere, and at any temperature!

You can serve this as a side dish or as an entree. Go along with the Greek-inspired theme and enjoy it with Greek salad, this chicken, and of course baklava for dessert!

Ingredients in Spinach Pie

The ingredients to this are actually pretty simple! Gather them up and hurry and make this. Follow the recipe card below for exact measurements!

Pie Crust: Refrigerated pie crust makes this recipe so easy! Feel free to make your own if you have the time.

Olive Oil: Oil the skillet to help cook the onions, garlic, and spinach.

Yellow Onion: Minced onion is delicious in this pie.

Garlic: Fresh minced garlic adds so much flavor!

Spinach: Stems removed and chopped. Fresh spinach is best but see my tips for frozen spinach!

Parsley and Dill I use fresh parsley and dried dill for added flavor! You’re welcome to use all fresh or all dried. Whatever you can find.

Crumbled Feta Cheese: Don’t try and substitute this for another cheese. The feta is classic to this dish.

Spinach Pie Recipe

You are going to love this spinach pie recipe. It is quick and easy and will surprise how flavor packed it is! All I can say is that you have to give it a try before you form an opinion because I know you’re going to LOVE it! Follow my step-by-step instructions below in the recipe card.

Preheat Oven/ Prepare Pie Crust: Preheat the oven to 350 degrees Fahrenheit then line a 12-inch pie dish with the pie crust. Place it in the refrigerator to keep the pie crust cold while you prepare the filling.

Saute the Onion, Garlic, and Spinach: In a large skillet over medium-high heat, saute the onion in the oil until the onion is tender. Add the spinach and garlic and saute until the spinach has wilted down. Remove the spinach and onion from the heat and set aside.

Add the Cheeses, Seasonings, and Eggs: In a large bowl, whisk together the parsley, dill, feta, ricotta, parmesan, salt, pepper, and eggs.

Stir in the Spinach Mixture: To the bowl add in the spinach mixture and mix thoroughly.

Pour Into the Pie Crust: Remove the pie crust and pan from the fridge and fill it with the spinach filling.

Bake: Bake the pie for 45-50 minutes, the top of the pie should start to turn a golden brown.

Rest and Enjoy: Remove from the oven and allow it to rest for at least 5 minutes before serving.

Tips and Variations

I have some tips and variations below for when you make this spinach pie! I hope you find them helpful because I want this recipe to be a success for you.

Cheese: Switch out the parmesan cheese if you want to experiment. I think mozzarella or pepper-jack cheese would be so tasty in this recipe. You can also use cottage cheese in place of ricotta cheese if you’re in a pinch. I would stick to full-fat though!

Spinach: You can use frozen spinach. Thaw 10 ounces of frozen spinach, thaw it, then thoroughly squeeze out any liquid before using.

Pie Dish: I used a deep pie dish to fit the filling. If your pie dish is shallow, I’d suggest using a bigger pie dish.

How to Store Leftovers

Leftover spinach pie is delicious the next day because you can enjoy it for breakfast, lunch, or dinner! Here is how you can store it for later.

In the Refrigerator: Once your spinach pie has cooled, then place it in an airtight container in the refrigerator. It will last about 3-5 days.

I’m always looking for recipes that make breakfast fun and unique! These Poffertjes definitely fit the bill! If you’re looking for other options to complete your brunch spread, try twisted bacon, baked scrambled eggs, air fryer sausage, and creamy poppy seed fruit salad.

What are Poffertjes?

Poffertjes make such a fun breakfast, snack or dessert! These light and airy mini pancakes are common street food in Amsterdam. They’re super easy to make too! A simple pancake batter is cooked on each side until golden and served warm with a sprinkle of powdered sugar.

Poffertjes are often confused with ebelskivers, and although they are very similar, there are a few differences. Poffertjes rely on active yeast as a leavening agent, whereas ebelskivers use baking powder and baking soda, making the poffertjes a little yeasty. Ebleskivers are rounder and can be filled with chocolate and jams, poffertjes are shallower and can’t be filled. Kids really have fun with Poffertjes because they look like baby pancakes, and we all go crazy for their wonderful flavor and melt-in-your-mouth texture.

Ingredients Needed

This Poffertjes recipe might look fancy but it uses common ingredients that you probably have in your pantry right now.

Milk: Warmed milk helps to activate the yeast and gives the batter a perfect consistency.

Instant Yeast: Ensures these pancakes puff up with a fluffy texture.

Sugar: For just enough sweetness.

All-Purpose Flour: Gives the pancakes structure and tenderness.

Salt: A small amount to enhance the flavor.

Egg: To bind the ingredients and ensure the pancakes cook properly.

Butter: To grease the pan.

How to Make Poffertjes

These look like they might be complicated to make but they’re quite simple. If you have a poffertjes pan that’s really convenient to use but a large skillet works too!

Activate the Yeast: In a medium bowl, whisk together the milk, yeast, and sugar. Let the mixture rest until the yeast becomes frothy, about 5 minutes.

Combine all Ingredients: In a large bowl, whisk together the flour and salt. When the yeast mixture is ready, pour it into the bowl of flour along with the egg.

Mix: Use an electric hand mixer and beat the batter until it is smooth. You can also use a whisk but an electric mixer is quicker.

Let Rest: Cover the batter and let it rest for 45 minutes to an hour, the batter should become very bubbly and double in size.

Cook: Heat a poffertjes pan or large skillet over medium heat. Grease each cup or the surface of the skillet with some of the butter and scoop a heaping tablespoon of batter into each cup. If using a skillet leave a couple inches of space between each poffertjes.

Flip: Flip the poffertjes after about 2 minutes of cooking, bubbles should form on the top of the uncooked batter.

Continue to Cook: Cook another 1-2 minutes until they are all golden brown on both sides then remove from the pan and continue with the rest of the batter.

Serve: Enjoy fresh dusted with some powdered sugar and your favorite sweet breakfast sides!

Tips and Variations

To ensure your Poffertjes bake up perfectly, here are a few tips and tricks! Our whole family loves these, and I know your family will love them too!

Use Buckwheat Flour: Poffertjes are traditionally made with 1 part all purpose flour and 1 part buckwheat flour, you can try making the recipe this way if you have buckwheat flour!

Size: Use a heaping tablespoon of batter for each Poffertjes. This will make enough to serve 8 people.

To Keep Warm: If you are cooking in batches and need to keep some warm while others are still cooking, place the mini pancakes on a baking sheet in a single layer and keep warm in the oven at 200 degrees Fahrenheit until ready to serve.

Clean the Pan: If you’re using a skillet to cook the poffertjes, try to wipe off the excess butter for the next batch of mix to be cooked. This will make sure the pancakes turn out golden brown and perfectly cooked each time.

Add More Flavor: To give these extra flavor, try adding a teaspoon or two of vanilla extract or almond extract.

Instructions

In a medium bowl, whisk together the milk, yeast, and sugar. Let the mixture rest until the yeast becomes frothy, about 5 minutes.
In a large bowl, whisk together the flour and salt. When the yeast mixture is ready, pour it into the bowl of flour along with the egg.
Use an electric hand mixer and beat the batter until it is smooth. You can also use a whisk but an electric mixer is quicker.
Cover the batter and let it rest for 45 minutes to an hour, the batter should become very bubbly and double in size.
Heat a poffertjes pan or large skillet over medium heat. Grease each cup or the surface of the skillet with some of the butter and scoop a heaping tablespoon of batter into each cup. If using a skillet leave a couple inches of space between each poffertjes.
Flip the poffertjes after about 2 minutes of cooking, bubbles should form on the top of the uncooked batter.
Cook another 1-2 minutes until they are all golden brown on both sides then remove from the pan and continue with the rest of the batter.
Serve fresh dusted with some powdered sugar and your favorite sweet breakfast sides!

Poffertjes are traditionally made with 1 part all purpose flour and 1 part buckwheat flour, you can try making the recipe this way if you have buckwheat flour!

What’s the difference between Poffertjes and ebelskivers?
Poffertjes rely on active yeast as a leavening agent whereas ebelskivers use baking powder and baking soda, making the poffertjes a little yeasty. Ebleskivers are rounder and can be filled with chocolate and jams, poffertjes are shallower and can’t be filled.

Potato appetizers are seriously the best. I can never get enough! You’ll have to try some homemade potato skins or mashed potato balls next! They’re sure to be a hit no matter the occasion.

What are Irish Nachos?

These Irish Nachos are anything but your average pub fare! Despite the name, they’re not actually an Irish dish. So, where does the “Irish” come in? It’s all about the star ingredient: crispy potato slices!

They take the place of traditional tortilla chips, giving these nachos a hearty twist! They’re still loaded with all the melty cheese, creamy toppings, and smoky bacon you crave, making them a perfect party appetizer.

Ingredient List

Irish nachos use a lot of simple ingredients. Just grab some potatoes and your typical ‘loaded’ fixings- sour cream, bacon, cheese, and chives!

Russet Potatoes: Thinly sliced russet potatoes are the base of this dish. Baked until crispy, they replace the usual tortilla chips. You can try different types of potatoes to see which you like best!

Olive Oil: A light coating of olive oil helps the potato slices crisp up beautifully in the oven without burning.

Salt and Pepper: Simple flavor boosters! Season to taste.

Cheddar Cheese: Shredded cheddar cheese is melted over the hot potatoes, creating a gooey and delicious layer that binds everything together.

Bacon: Because everything is better with bacon. Chop it into small pieces so each bite of the Irish nachos are filled with meaty goodness!

Sour Cream or Crema: A dollop of cool sour cream (or crema) cuts through the richness of the cheese and adds a refreshing tang.

Chives or Green Onions: Chopped to add an extra pop of flavor.

Let’s Make Irish Nachos!

For easy prep of your potatoes, I recommend using a mandolin slicer. (Just be careful of your fingers, they’re sharp!)

Slice Potatoes: Carefully slice the potato thin with a knife, about ⅛ inch thick, or slice it on a mandolin. Place the slices in a large bowl filled with cold water and let them soak for 30-45 minutes. Meanwhile, preheat the oven to 400 degrees Fahrenheit.

Season: Remove the potatoes from the water and pat them very dry with a clean kitchen towel or paper towels. Place them in a single layer on 2 baking sheets. Drizzle with about a ¼ cup of olive oil and season with a few large pinches of salt and some ground black pepper. Toss the potatoes all around until they are all evenly coated with oil and seasonings and redistribute them on the baking sheets in a single layer.

Bake: Bake the potatoes for 40-45 minutes, until they are beginning to turn brown and crispy. You will need to flip the slices over every 10-15 minutes to ensure they do not stick to the pan. If some slices crisp up faster than others, remove them from the pan and place them on a plate lined with paper towels. Once all the potatoes are done, add the rest of them to the paper towels to cool for 10 minutes or so.

Assembling the Irish Nachos

Melt Cheese: Spray a sheet pan with pan spray and spread out all the crisp potatoes on the pan. Sprinkle the potatos generously with cheese and bake for 2-3 minutes at 400 degrees Fahrenheit, until the cheese is melted. Give the nachoes more time if you want the cheese a little more melted, but keep a close eye on them as the cheese can overbake very quickly. 

Add Toppings and Serve: As soon as the nachos come out of the oven, drizzle them with sour cream (you can thin it down with a little milk if you’d like) or crema, and sprinkle with chopped bacon and chives. Serve immediately.

Tips and Variations

More Toppings: If there is a topping you loooove on a baked potato, add it on! Try toppings such as chili, corned beef, cheese sauce, sliced jalapenos, diced tomatoes, or sauteed mushrooms.

For Faster Prep: The preparing and crisping of the potatoes is a labor of love. Fear not, there is an easier way! Use thick-cut, kettle chips in place of the homemade ones. A few big handfuls will save you a ton of time and deliver super tasty nachos!

Don’t Overcook: Watch your nachos as the cheese melts. It takes only a few minutes, but the exact timing will vary from oven to oven.

How Long Do Irish Nachos Stay Good?

If you’re familiar with my stuffed cabbage rolls then get excited for this easier casserole version! Instead of loading the cabbage leaves with the meat mixture and cheese mixture, let’s just layer it all in a casserole dish. SO much faster, but just as tasty! The added rice makes it hearty, and the melty cheese is the perfect topping for any casserole. This one-pan meal is such a great way to get in those veggies while you feed your family. It’s like a deconstructed version of stuffed cabbage rolls, and I can’t wait for you to try this recipe!

Ingredients For Cabbage Roll Casserole

These ingredients are healthy and together make such a delicious and filling dinner! It’s loaded with flavor and the whole family will love it. See the recipe card at the bottom of the post for exact measurements!

Olive Oil: Use olive oil to cook the beef, onion, and garlic.

Ground beef: When it comes to ground beef, I like to use lean ground beef.

Onion: I like to mince the onion so that I don’t have any large chunks.

Garlic: If you don’t have any fresh garlic cloves then use refrigerated minced garlic.

Seasonings: I use salt, pepper, Italian seasoning, and dill! They all add so much flavor to this casserole.

Marinara sauce: You can use store-bought or make this delicious homemade marinara sauce.

Diced Tomatoes: One can of diced tomatoes adds texture to the casserole.

Cooked Rice: I used long-grain white rice for this recipe, but you can use brown rice if you want it to be more filling and a bit healthier!

Butter: Butter to help brown and wilt the cabbage. Plus it makes the cabbage so yummy!

Cabbage: Green cabbage is what I used for this recipe!

Shredded Cheese: Sprinkle the cheese throughout the casserole and on top of the casserole to get nice and cheesy!

Cabbage Roll Casserole Recipe

This recipe is much easier to make than traditional cabbage rolls. It’s easy to assemble and you will have an amazing meal in no time! Follow the instructions below on the recipe card.

Preheat the Oven: Preheat the oven to 350 degrees Fahrenheit.

Brown the Meat, and Onion: In a large skillet over medium heat, add the olive oil, ground beef, and minced onion. Cook until the meat is no longer pink and the onion is softened.

Add Garlic and Seasonings: Add the garlic, Italian seasoning, dill, salt, and pepper. Stir and cook for 30 seconds.

Stir in Marinara, Diced Tomatoes, and Cooked Rice: Add the marinara sauce, diced tomatoes, and cooked rice. Stir until combined and continue to cook until warmed through.

Cook the Cabbage: In a large pot, add the butter and cabbage. Cook on high heat until the cabbage is barely wilted and browned.

Assemble the Casserole: To assemble the casserole, layer half of the cooked cabbage in the bottom of the casserole dish. Evenly layer half of the beef mixture on top of the cabbage followed by 1 cup of shredded cheese. Repeat the layers one more time.

Top With Remaining Shredded Cheese: Sprinkle the remaining cup of cheese on top of the casserole.

Bake: Bake for 20-25 minutes until hot and bubbly.

That said, even though they say it’s dishwasher safe, it’s really recommended to hand wash them. You also then need to be careful about using sharp metal objects in the pan because it could damage the nonstick coating. The Circulon Non-Stick, 10-Piece Bakeware Set is available at Amazon for $99.

Wilton 7-Piece Texturra Baking Set

I LOVE the cool minty-blue color to this set and that it contains seven pieces for around $100. Also, you know I have a lot of respect for a small, family-owned business (this one’s been in the same family since the 1920s). But users report these pans are very, very difficult to clean and that’s why I can’t name it a top pick. The Wilton 7-Piece Texturra Baking Set is available at Amazon for $100.

OXO Good Grips 14-Piece Glass Bakeware Set

I often get asked for recommendations for the best glass bakeware set and would not hesitate to recommend this one from OXO, a leading kitchenware brand. But the best kinds of lids for longevity are stoneware, not plastic, so this set might be better if you plan to do a lot of baking, followed by freezing. What to Consider Before Buying a Bakeware Set

Before you hop onto your favorite online retailer and click on what you think will be the best bakeware set, step back and think about what you want and need. The answers are different for everyone and all go back to what you plan to actually bake. Consider the products’ material, the number of pieces in the set, how easy they are to clean, and what shapes these pieces are (some recipes just do better in a rectangular versus round dish, for example).

Material: Glass may retain heat better than metal, and ceramic performs as well as glass, but think about the weight. If you have trouble lifting heavy pans out of the oven or are going to be transporting this to the table to serve, you don’t want heavy pans (unless the handles are sturdy).

Number of Pieces: Think about quality and not quantity. If you really, really want two round cake pans, then what good will it do to buy a three-piece of rectangular pans like my Staub pick? Some people bake banana bread religiously. Then go for a loaf pan. Others are hugely into casseroles and will want a set with a 9” x 13” pan, for example.

Cleaning: Look for a set where the pieces can go into the dishwasher. Nearly all can. So why would you buy one that you have to scrub and wash by hand? I would make that exception if the set is truly, truly great, however, in all other areas.

Shapes: Based on my extensive research, this guide includes bakeware sets featuring rectangular, round, and oval shapes, along with muffin molds. As any seasoned cook knows, you can take the same recipe for chocolate chip muffins and put it into a cake pan, so long as you adjust the cooking time, but what works best for YOU and your family?

This material is a common material used in bakeware. The reason aluminized steel is used is because it creates a layer of protection between aluminum and the food, making it safe to eat as there is no leaching of metals.

Let it Meld!

Tips and Tricks

Easy Prep: For the easiest way of making this dressing and saving all the time mincing things, add the chunky ingredients to a food processor or small food chopper to blend them quickly until they are minced. Add the remaining ingredients and pulse until everything is combined.

Adjust the Heat: Chili sauce is a little spicier than ketchup, so if you use ketchup you should taste the sauce and add more horseradish or hot sauce if you want it to be spicier.

Is Russian Dressing the same as Thousand Island? Not quite! Russian dressing is spicier thanks to the addition of horseradish (and sometimes hot sauce and chili sauce).

This Nutella banana bread recipe is prepped and ready in just 10 minutes! Then, let the oven do the rest of the work. The hardest part about making this is waiting for it to bake and cool! Here’s how to layer the batter and Nutella for the most delicious quick bread:

Prep: Preheat the oven to 350 degrees Fahrenheit and spray a 9×5-inch loaf pan with pan spray and set aside.

Combine Ingredients: Mix the banana, baking soda, oil, sugar, eggs, salt, and flour in a large bowl until combined.

Layer Nutella: Pour half of the batter into the prepared pan. Heat the Nutella in a small bowl for 20-30 seconds, until it is very soft, almost liquid. Drizzle half of the Nutella over the batter in the pan in zigzags and then top it with the remaining batter.

Finish Layering: Drizzle the rest of the Nutella over the top of the batter in lines. Use a knife to swirl the Nutella into the banana batter, going up and down the length of the pan a few times. Be sure the knife goes down to the bottom of the pan so the middle layer of Nutella gets swirled as well!

Bake and Cool: Bake for 40-45 minutes, until a toothpick comes out clean from the center. Let the bread cool for at least 20 minutes before slicing.

Tips and Variations

We cannot get enough of this Nutella banana bread! Here are some substitution options, and also a tip for quickly ripening your bananas. This is such a great way to take your average banana bread up a notch. I can’t wait for you to try it!

Butter: The oil can be substituted for butter! Use the same amount of melted butter in place of the oil. If you choose to use salted butter, omit the pinch of salt included in the recipe.

Sugar: If you love a little more sweetness, substitute white sugar for brown sugar, or for a healthier option try coconut sugar or monk fruit sweetener.

Frozen Bananas: Use frozen bananas by thawing them overnight at room temperature. If there is any liquid from the bananas, simply discard that before mashing.

Save your overripe bananas! If you have bananas that are turning black, these are excellent for banana bread. You can peel them and freeze them for later or use them right away in this Nutella banana bread for an extra sweet and concentrated flavor of banana.

To Ripen Bananas Quickly: If you have a couple of days, place the bananas in a brown paper bag and close it. This traps the ethylene from the bananas and helps them ripen faster. In a pinch, you can bake the bananas in a 300 degree Fahrenheit oven for 25-30 minutes. Bake until the peel turns black. 

Storing Leftovers

This Nutella banana bread stores really well! It also freezes beautifully! We highly recommend you make an extra loaf to freeze for later. Then, you can have a slice of this deliciousness at a moment’s notice!

At Room Temperature: Place the cooled bread in a ziplock bag or airtight container. Store it in the pantry or counter at room temperature for a few days. Always keep the bread wrapped or stored when not eating. This will lock in the flavor and keep it moist.

In the Freezer: Allow the bread to cool completely. Wrap the entire loaf tightly with 2-3 layers of plastic wrap, followed by a layer of foil. Place the wrapped bread in a large freezer ziplock bag and lay it in the freezer. When ready to enjoy, thaw for a few hours at room temperature, or overnight in the refrigerator.

Garnishes: Chopped green onions and reserved bacon pieces add extra texture and flavor.

Let’s Make Beer Cheese Soup!

It’s actually pretty easy to put this homemade soup together. You’ll have a big pot ready to feed your family in less than an hour! Psst- this beer cheese soup recipe is great for storing and enjoying later, so don’t worry about making too much!

Cook and Chop Bacon: In a large pot over medium high heat, cook the bacon. Remove the cooked bacon from the pot and set it on paper towels to cool. Once the bacon is cool enough to handle, chop the bacon into coarse bits, set 3-4 tablespoons of bacon bits aside for garnish.

Sauté Vegetables: Remove all but 3 tablespoons of the bacon grease from the pot. To the pot add the onion, carrots, and celery. Sauté the vegetables in the bacon grease until the vegetables become tender and the onions are transparent, about 8-10 minutes.

Roux: Add in the garlic and sauté another minute. Add the butter and briskly whisk in the flour to create a roux. Slowly pour in the chicken broth, whisking briskly to create a smooth sauce.

Mix in Remaining Ingredients: Pour in the beer, whole milk, Worcestershire sauce, mustard powder, paprika, salt, pepper, and bacon bits. Bring to a boil then reduce the heat to low and simmer for about 10-15 minutes.

Add Cheeses: Add in the shredded cheese and stir to combine well. Remove the pot from heat and serve the beer cheese soup with green onions, bacon bits, and homemade croutons for garnish.

What Beer Should I Use?

I’ve found that using a malt beer yields a milder flavor that has a broader appeal for most people, but you can use any kind of beer you’d like! I used Pabst Blue Ribbon beer because it is widely available.

Storing Leftovers and Reheating

This delicious soup can be enjoyed for days to come as a quick and easy lunch! Let it cool completely, then store it in an airtight container in the fridge for up to 5 days. When you’re ready for another bowl, simply reheat it gently on the stovetop over low heat, stirring occasionally. You can also reheat in the microwave, stirring between 1-minute cooking intervals.

Can I Freeze Beer Cheese Soup?

Yes! It’s great for meal prep. Transfer to a freezer bag and freeze for 2-3 months. When you’re ready to enjoy it again, let it thaw overnight in the fridge and then reheat as usual over the stove.

Ingredients

8 strips thick cut bacon, divided1 yellow onion, diced1 large carrot, diced2 celery stalks, diced2 cloves garlic, minced2 tablespoons butter cup all purpose flour2 cups chicken broth12 ounces beer, malt beer works best2 cups whole milk1 tablespoon worcestershire sauce1 teaspoon mustard powder1 teaspoon paprika1 teaspoon salt½ teaspoon pepper3 cups sharp cheddar cheese, shredded1 cup gruyere cheese, shreddedSliced green onions for garnish

Instructions

In a large pot over medium high heat, cook the bacon. Remove the cooked bacon from the pot and set it on paper towels to cool. Once the bacon is cool enough to handle, chop the bacon into coarse bits, set 3-4 tablespoons of bacon bits aside for garnish.
Remove all but 3 tablespoons of the bacon grease from the pot. To the pot add the onion, carrots, and celery. Saute the vegetables in the bacon grease until the vegetables become tender and the onions are transparent, about 8-10 minutes.
Add in the garlic and saute another minute. Add the butter and briskly whisk in the flour to create a roux. Slowly pur in the chicken broth, whisking briskly to create a smooth sauce.
Pour in the beer, whole milk, worcestershire sauce, mustard powder, paprika, salt, pepper, and bacon bits. Bring to a boil then reduce the heat to low and simmer for about 10-15 minutes.
Add in the cheeses and stir to combine well. Remove the pot from heat and serve the soup with green onion and bacon bits for garnish.
