Carrot Cake Roll Recipe

This festive carrot cake roll is so spectacular, it’s bound to get many oohh’s and aahh’s. Not only does it look gorgeous but it also tastes SO scrumptious and has the best texture. We love to enjoy it in the springtime or at Easter gatherings but it’s actually a really great dessert year-round. The moist cake, warm spices, fresh carrots and fluffy cream cheese frosting simply can’t be beat!

I know a cake roll can seem kind of intimating but they aren’t at all. If I can make one then anyone can! I’ll share all my tips, plus step-by-step photos below so you’ll get it perfect every time!

Ingredients Needed

Don’t be intimidated by the list of ingredients needed for this carrot cake roll. They are all simple baking ingredients, most of which you probably already have in your kitchen. See the recipe card below for a list of exact ingredient measurements.

Cake

Eggs: Use three large eggs for structure, richness and proper baking.

Brown Sugar: Sweetens the cake while adding depth of flavor.

Granulated Sugar: For the perfect amount of sweetness.

Vanilla Extract: Adds a subtle warm flavor.

Shredded Carrots: To make grating the carrots really fast, use a food processor with the grater attachment. 

All-Purpose Flour: The best flour to use for a tender crumb.

Spices: A warm blend of ground cinnamon, ground ginger and ground nutmeg for that classic carrot cake flavor we love!

Baking Powder: Helps the cake rise and get perfectly fluffy while baking.

Salt: Intensifies all of the delicious flavors.

Cream Cheese Filling

Cream Cheese: An essential ingredient when making the icing for carrot cake. The creaminess and tangy flavor are the most wonderful complement to the moist cake and warm spices.

Salted butter: Mixes with the cream cheese for the most delicious filling.

Vanilla Extract: Enhances the taste of the frosting.

Powdered Sugar: To sweeten the frosting while keeping it smooth.

How to Make a Carrot Cake Roll

Once you see how easy this carrot cake roll is to make, you won’t want to reserve it just for Easter. It’s such a great dessert anytime of the year! Make it for your next baby shower, bridal shower or potluck.

Cake

Prep: Preheat oven to 350 degrees Fahrenheit and line jelly roll pan with parchment. Spray with pan spray and set aside.

Whip Eggs: In a large bowl, use a hand mixer to whip the eggs for 2-3 minutes on high, until light and frothy.

Add Sugars: Beat in the brown sugar, granulated sugar, and vanilla. Fold in the shredded carrots.

Mix Dry Ingredients: Whisk the flour, cinnamon, ginger, nutmeg, baking powder, and salt in a medium bowl.

Combine Dry and Wet Ingredients: Add the dry ingredients to the wet and fold in by hand just until no streaks of white remain.

Bake: Pour the batter into the prepared pan and bake for 10-15 minutes, until the cake is fully baked in the center and a toothpick comes out clean. While the cake bakes lay out a clean kitchen towel and dust it with about ¼-⅓ cup of powdered sugar.

Cool and Roll the Cake: Remove the cake from the oven and let it cool for 5 minutes before inverting onto the kitchen towel. Using the short side, roll the cake up tightly into the towel. Leave the cake rolled up until it is completely cooled.

Cream Cheese Filling

Make the Filling: While the cake is cooling, prepare the cream cheese filling by beating the cream cheese and butter together in a large bowl until smooth.

Finish with Vanilla and Powdered Sugar: Add the vanilla extract and powdered sugar and beat until smooth.

Assemble

Add filling: Unroll the cooled cake and spread the cream cheese filling evenly over it, leaving ½ inch of unfrosted cake on one of the short ends.

Roll and Chill: Start on the short end without the unfrosted part and roll the cake up tightly into a log. Wrap the cake tightly in plastic wrap and chill for at least 4 hours before serving.

Serve: When you’re ready to serve, you can dust the chilled cake with powdered sugar or leave it plain. Slice with a sharp knife for the cleanest slices.

Helpful Tips

Here are my best tips for making a carrot cake roll, so you can make a perfect dessert that your friends and family will love so much!

Be Prepared: Read through all of the instructions before making the recipe. This recipe is straightforward but there are quite a few important steps, so it’s a good idea to read through all of them before starting.

Room Temperature Ingredients: For best results, start with room temperature butter, eggs and cream cheese.

Carrots: Peel and grate large carrots using a box grater or food processor. Don’t use pre-grated carrots, as they have less flavor and may be too dry.

For Presentation: For a pretty presentation, you may want to slice off a small amount of each end of the cake so you can easily see the swirled roll when serving.

Prevent Sticking: It’s important to dust the kitchen towel with powdered sugar before using it to roll up the cake. This prevents the cake from sticking.

Wrap in Plastic Wrap: Don’t forget to wrap the cake in plastic wrap while it’s chilling in the fridge. This will prevent it from becoming dry.

Clean Slices: Ensuring your cake is nice and chilled will help with getting beautiful clean slices. For super clean slices, be sure to use a very sharp knife and wipe it off between each slice.

Storing Leftovers

You’re lucky if you have any of this amazing treat left! Here’s how to store it, so you can enjoy again later.

In the Refrigerator: If you have some leftover carrot cake roll, wrap it tightly in plastic wrap. Then, place it in your fridge and it will keep for up to 3 days!

In the Freezer: Wrap tightly with plastic wrap and then wrap in aluminum foil. It will keep for about a month. Write the date on it! Before serving, thaw for about an hour at room temperature. Then, slice and enjoy!

Perfectly Soft Buttery Rolls

These perfectly soft buttery rolls are truly the most amazing homemade rolls you will ever make! What makes them perfectly soft and buttery? The addition of the fats from the milk, butter, and eggs makes them extra tender, fluffy, and melt-in-your-mouth delicious. These rolls are a labor of love, but definitely worth it when you bite into the pillowy roll! If you’re new to working with yeast, don’t be intimidated because this is a great recipe and I walk you through all the steps. They turn out beautifully no matter what!

You will be known for these perfectly soft buttery rolls when you share them with family and friends! Make them for holiday meals, special occasions, or whenever you want a comforting warm homemade roll. Slather your rolls with honey butter, jam, or this cinnamon honey butter.

What You Need to Make Perfect Rolls

Don’t let working with yeast scare you. It’s super simple and these rolls can’t get any easier. You’ll have perfectly soft buttery rolls in no time. Most of these ingredients are probably already in your pantry ready to go.

Whole Milk: Warmed but not hot! Warm it between 80 and 110 degrees Fahrenheit.

Sugar: This is necessary for the yeast to activate.

Active Dry Yeast: Use 2 ¼ teaspoons or 1 packet for this recipe.

All-Purpose Flour: All-purpose flour is best to achieve fluffy soft rolls.

Salt: Salt is essential for bread to have flavor.

Unsalted Butter: melted but not hot

Large Eggs: It helps to beat the eggs before adding them to the dough ingredients.

Butter: To brush on the tops of the rolls!

Let’s Make Perfectly Soft Buttery Rolls

The best roll recipes take time, especially when it needs time to rise, so don’t rush it. This will ensure a nice light fluffy interior when you allow the air pockets to form during rising. I promise it will be worth the wait! I can’t wait for you to make these perfectly soft buttery rolls!

Prepare and Raise the Dough

Proof the Milk, Sugar, and Yeast: In a medium bowl mix together the milk, sugar, and yeast. Let it rest until the yeast has become foamy and active.

Combine the Flour and Salt: In the bowl of the stand mixer, add 3 cups of the flour then whisk in the salt. Pour the yeast mixture into the flour mixture. Using the dough hook attachment mix on low until the dough begins to come together.

Knead the Flour Mixture, Yeast Mixture, Butter, and Eggs: Pour in the butter and eggs. Then add the remaining flour ¼ cup at a time until the dough pulls away from the sides of the mixer. The dough will still be slightly tacky, you may not use all of the flour.

Cover and Raise the Dough: Remove the dough from the bowl and add it to a lightly oiled bowl. Cover with saran wrap or a damp cloth. Let the dough rise until it has doubled in size, about 45 minutes to an hour.

Shape and Raise the Rolls

Divide and Shape Dough Balls: Place the dough on a lightly floured surface and punch it down to release the air. Divide into 15 equal pieces and roll each piece into a ball.

Raise the Rolls: Grease a 9X13-inch baking dish with butter. Evenly arrange the rolls in the prepared pan. Cover the rolls and let them rise until they are doubled in size. Preheat the oven to 375 degrees Fahrenheit.

Bake the Rolls

Bake: Bake for 20-25 minutes or until golden brown. The temperature of the rolls out of the oven should be 190 degrees Fahrenheit.

Brush with Butter and Enjoy: Remove the perfect soft buttery rolls from the oven and brush with additional melted butter. Enjoy warm!

Tips For Perfectly Soft Buttery Rolls

No matter which roll recipe you are making, here are a few tips that will come in handy. Once you get the hang of it, you will become a roll master!

Activate: Make sure the yeast gets activated. If the yeast does not activate, your rolls will not rise. If the yeast does not get bubbly and frothy, then I recommend starting over. 

Flour: Do NOT add too much flour. Adding too much flour will turn an amazing soft roll into a heavy dry roll. Add the flour 1/4 cup at a time until it pulls away from the bowl. The dough will still be slightly tacky, you may not use all of the flour. Knowing how much flour to add can be tricky, but the more rolls you make, the easier it will be to tell when there is enough.

Tip For Shaping the Rolls: You can always spray your hands with cooking spray to help shape the rolls and keep the dough from sticking to your hands.

Do NOT Overbake: If you overbake your rolls, they will be dry and no one wants a dry roll. If you really want to get technical, use a thermometer to check the internal temperature of the rolls when they come out. They should be 190 degrees Fahrenheit.

Storing and Freezing Rolls

Everyone loves these perfectly soft buttery rolls and we fight over the leftover rolls! Especially when you warm them in the microwave for 10 seconds. It tastes like it’s fresh from the oven! I’ve also added some tips for freezing the dough to make rolls for later!

At Room Temperature: Store completely cooled rolls in an airtight container at room temperature for up to 4 days.

Freeze the Dough: Keep the dough frozen in an airtight container for up to a month. I recommend spacing the rolls on a sheet pan and freezing them into balls first, then place in an airtight container.

Thaw and Bake: To thaw, remove the frozen rolls from the freezer and place them in a greased baking dish. Cover with a tea towel then let them rest and rise at room temperature until they have thawed and doubled in size. Bake using the instructions on the recipe card!

Casserole:

Olive Oil: Gets our ground beef sizzling.

Ground Beef: The main protein of the Big Mac casserole. I used lean ground beef!

Frozen Hash Brown Potatoes: Crispy on the outside, fluffy on the inside!

Let’s Make Big Mac Casserole!

This is such a fun twist on a classic fast food item that will have everyone asking for seconds.

To Make the Sauce

Combine Ingredients: In a medium bowl, add the mayonnaise, relish, vinegar, garlic powder, onion powder, paprika, turmeric, and sugar.

Whisk Together: Whisk the ingredients together until combined.

Adjust Flavor: Taste and adjust the seasonings if needed. And more granulated sugar if you like the sauce on the sweeter side!

Casserole Meat

Preheat Oven, Prepare Pan: Preheat the oven to 375 degrees Fahrenheit. Spray a baking dish with non-stick cooking spray.

Brown Ground Beef: In a large skillet over medium-high heat, brown the ground beef until no longer pink.

Add Onion: Add the onion and cook until the onions are softened.

Add in Seasonings: Stir in the Worcestershire sauce and seasonings.

Mix in Sauce: Pour half of the Big Mac sauce into the meat mixture and stir to combine. 

To Assemble

Potato Layer: Place the frozen potatoes in the bottom of the prepared dish.

Meat and Cheese Layer: Top the potatoes with the meat mixture then sprinkle on the shredded cheese.

Add More Sauce: Drizzle ¼ cup Big Mac sauce over the meat mixture then top with the shredded cheese.

Bake: Cover the casserole with foil and then bake for 25 minutes. Remove the foil then bake an additional 5 minutes or until the cheese is melted.

Garnish: Garnish the top of the casserole with additional onions, pickles, and chopped lettuce. Then sprinkle with hamburger bun croutons and sesame seeds if desired.

Leftovers of this Big Mac casserole are even tastier the next day for lunch! Follow my tips below for storing and reheating leftovers. Remove any lettuce topping before reheating. Then add fresh shredded lettuce before serving again!

In the Refrigerator: In the fridge, your casserole should last about 3-4 days. Store in an airtight container for best results.

To Reheat: When it’s time to enjoy your leftover casserole you can reheat it in the microwave. Heat in 1-minute intervals, stirring in between until it’s warmed through.

It’s definitely one of those dinners that’s picky eater approved!

Everything comes together so easily too. From start to finish, this Tex-Mex recipe takes only about 15 minutes to prepare. After that, all you have to do is bake it for 30 to 35 minutes and you will have a tasty main! If you’re looking for comforting Mexican food, this is your recipe. Green chile chicken is pretty straightforward to make, but here are a few extra tips to take it to the next level!

Different Cuts of Chicken: I used whole chicken breasts, but this recipe will work with 3 pounds of any chicken cut. You can use thighs or breasts and leave them whole or cut them into pieces. Regardless of the cut, be sure to temp the thickest piece with a thermometer to make sure the chicken reaches 365 degrees Fahrenheit.

Spice it up! I used mild green chilies, but you can use whichever heat you prefer! You may even add a pinch (or more!) of ground cayenne pepper to the cream cheese mixture to add some extra heat. 

Cheese Varieties: I prefer Colby Jack cheese with this recipe but you may use an alternative cheese, if you’d like. Try cheddar, Monterey Jack, or even mozzarella! 

Add some fun toppings! Add diced tomatoes, jalapenos, sliced avocado, fresh cilantro, or squeeze a lime over the top.

Make Ahead & Storing Leftovers

This green chile chicken dish is so mouthwatering and amazing, I’m not sure that you will have anything leftover! But if you do, here is how you can store it for later!

In the Refrigerator: Store leftovers in the fridge in an airtight container for up to 5 days.

How to Make Homemade Peanut Butter

Fresh, delicious homemade peanut butter in less than 5 minutes! You can use it for so many different recipes. (Find some of my favorites below!)

Blend: Add the peanuts to a food processor. Mix for 1 minute before scraping the sides and bottom down. Mix again for several more minutes, until smooth.

Repeat: Stop the processor and scrape down the sides and bottom as needed to ensure all of the peanuts are fully blended.

Season and Store: Add a few pinches of salt, if desired. Transfer to an airtight container.

Tips and Variations

A few extra ways to make sure your homemade peanut butter turns out just the way you like it.

Adjust the Consistency: You don’t have to blend the peanuts until they are completely smooth! Mix until the peanut butter has reached the consistency you prefer for peanut butter.

Make it Smooth: If you like a very smooth peanut butter with big chunks of peanuts mixed in, blend the peanuts until they are super smooth, then chop up 1/3 cup of additional peanuts and stir them in by hand.

Adjust the Salt: Adjust the salt according to your taste. If you use salted peanuts, you will need very little added salt, if any. If you use unsalted peanuts, then you pay need 2-3 good-sized pinches of salt if you would like.

Use Enough Peanuts: If the peanuts have a hard time blending, then your food processor might be larger than mine. You need to have enough peanuts for the blade to blend them around as they become more and more pureed. If needed, add more peanuts until the mixture continues to be consistently blended. Your final yield of peanut butter will be greater, but you’ll find more success with blending the peanut butter more smoothly.

How Long Does Homemade Peanut Butter Last?

Store in an airtight container or jar for up to 1 month at room temperature, or 2 months in the refrigerator.

The peanut butter will solidify a bit if stored in the refrigerator. You may let it come to room temperature before using it, or warm it in 5-second intervals in the microwave before use.

*Note: Natural peanut butter can separate as it sits. If the oil has separated from your peanut butter when you go to use it, use a spoon or a butter knife to stir all of it together before using it.

What I love most about this teriyaki spinach pasta salad is how unique it is! The flavors are so delicious and you’ll want to bring it to every gathering. Here are some tips and ideas to make it your own.

Make Ahead: This teriyaki spinach pasta salad can be prepared in advance! Prep all the add-ins and store them in containers. Make the dressing and refrigerate, then cook and chop the chicken. Cook the pasta ahead of time, then assemble when you’re ready to serve. You can even assemble it and refrigerate it for up to 2 hours before serving. All of the ingredients hold up well and marinate together!

Add Different Fruit: Grapes or pineapple would be delicious in this salad. Experiment and make it your own!

Nuts: I love any type of honey-roasted nuts because it adds sweetness, but any type of nuts can be used in this salad. Raw, toasted, caramelized…you decide!

Chicken: I LOVE using leftover grilled chicken in the recipe. The grilled flavor pairs well with the teriyaki dressing. Any leftover chicken will work. Use baked, shredded, or even a rotisserie chicken.

Homemade Cottage Pie

Today I’m sharing one of my favorite comfort food dinners! Shepherd’s Pie (also known as cottage pie) is one of those recipes that has taken on a lot of forms over the past several decades, and what you put in it probably depends on where you live.

Sometimes casseroles like Shepherd’s Pie get a bad rep, but this recipe is loaded with flavor (I like my beef nice and saucy!), and topped with the creamiest mashed potatoes. You’ll forget about every other lackluster casserole you’ve had!

Ingredients You’ll Need

Originally, Shepherd’s Pie was made with ground lamb, but the Americanized version usually swaps the lamb for ground beef (although if you really want, can use lamb instead!). This here is the way we like it: a nice, rich-tasting sauce with ground beef and plenty of vegetables, topped with creamy, buttery mashed potatoes. I know you’ll love it, too!

Carrots, Celery, and Onion: These chopped veggies add flavor, texture, and nutrients to the meat filling.

Ground Beef: This is the main protein source in the pie. I used lean ground beef! You can also use ground lamb for a more traditional version.

Garlic: For a savory punch of flavor.

Tomato Paste: Adds richness and flavor to the meat filling.

Worcestershire Sauce: So your Shepherd’s Pie has an extra boost of flavor.

Beef Broth: This forms the base of the gravy, adding moisture and flavor.

Cornstarch: This helps create a slightly thickened gravy for the filling.

Dried Herbs: I used thyme, oregano, and parsley.

Salt and Pepper: Add to taste!

Frozen Peas: These add pops of sweetness, color, and texture to the Shepherd’s pie filling.

Mashed Potatoes:

Potatoes: Russet or golden potatoes are perfect for mashing due to their high starch content. This creates a creamy texture.

Butter: Adds richness and creaminess to the mashed potatoes.

Half and Half: For extra creaminess!

Boursin Cheese (Garlic and Fine Herbs Flavor): This soft cheese infuses the mashed potatoes with delicious garlic and herb flavors.

Salt and Pepper: Adjust to taste.

How to Make the Best Shepherd’s Pie

Preheat Oven: Preheat the oven to 375 degrees Fahrenheit.

Sauté Veggies: In a large, deep skillet, heat the oil over medium-high heat and cook the carrots, celery, and onion until softened, about 5 minutes. 

Brown Ground Beef: Add the beef and cook until thoroughly browned and no pink remains. Break it up into pieces as it cooks. Add the minced garlic and cook for 1 additional minute. 

Sauce: Whisk together beef broth and cornstarch. Add it to the skillet, along with the tomato paste, Worcestershire sauce, herbs, and salt and pepper. Stir in the frozen peas and cook for 5 minutes, until the sauce has thickened. 

Mashed Potatoes

Add to Pot: Add the peeled and diced potatoes to a large pot and fill with cold water until the potatoes are covered. Add 2-3 large pinches of kosher salt. 

Boil: Place the pot over high heat and bring to a boil. Reduce heat to maintain a rolling boil and cook until tender, about 12-15 minutes.

Mash and Season: Drain the potatoes into a colander. Return the potatoes to the pot and either run them through a potato ricer or use a hand masher to mash them well. Add the butter, warm half and half, and Boursin cheese to the potatoes and mash until creamy. Taste and season with salt and pepper if needed. 

Layer: Spread the potatoes evenly over the top of the meat mixture.

Bake: Bake the Shepherd’s pie uncovered for 25-30 minutes until the edges are bubbling. Sprinkle with fresh chopped parsley and serve.

Tips for Making Ahead

You can make the entire casserole in advance, and simply cover and refrigerate before baking. Store in the fridge up to 3-4 days before baking and serving.

You can prep your ground beef, and keep 1 pound portions in the freezer for quick dinners down the road.

You can prep your beef and vegetable filling, then refrigerate for easy prep later in the week, or even freeze individual portions to top with potatoes later on.

Can I Freeze Shepherd’s Pie?

Shepherd’s Pie can be frozen, but you need to keep in mind that potatoes are never quite the same in texture after being frozen.

Introducing your new favorite mashed potato recipe! I wish I could describe how silky smooth and delicious these Boursin mashed potatoes are. What exactly is Boursin cheese? Created by François Boursin, a cheesemaker from Normandy, Boursin cheese is a flavored cheese, and the creamy texture comes from cow’s milk. It comes in many flavors and this incredible cheese can enhance so many delicious recipes. For example, you will love my Boursin chicken recipe! I used Boursin garlic & fine herbs Gournay cheese in these potatoes and it deserves a chef’s kiss! You will love the added garlic and herbs bursting in every bite!

Mashed potatoes are my go-to side dish to serve to my family! They’re easy to make and everyone loves them. I have more mashed potato recipes you have to try! These crockpot potatoes are great because you can make them ahead of time. You’ll also love these garlic potatoes, and my Dad’s famous potatoes are a MUST!

Ingredients You Will Need

This recipe uses basic mashed potato ingredients with the addition of Boursin cheese! Find Boursin cheese near other soft cheeses at the grocery store. You will love the flavor and creaminess it adds. Check out the recipe card at the end of the post for exact measurements.

Yukon Gold Potatoes: Feel free to use red or russet potatoes if you prefer. See my tips below!

Butter: Softened or room-temperature butter melts the best!

Heavy Whipping Cream: Adds to the creamy texture of the potatoes. Half & half or whole milk works as well. The higher fat content adds to the creaminess, but any milk will work!

Boursin Garlic & Fine Herbs Gournay Cheese: Let the cheese soften at room temperature with the butter.

Garlic Powder: Adds delicious garlic flavor to the potatoes.

Coarse Salt: Season to taste!

Cracked Black Pepper: Helps to season and balance out the salt.

Fresh ParsleyFor garnish when serving, if desired.

Boursin Mashed Potatoes Recipe

These Boursin mashed potatoes are easy to whip up! Like any classic mashed potato recipe, you simply boil the potatoes and then mash in the good stuff! They come out perfectly fluffy and creamy every time!

Prepare the Potatoes: Wash and quarter the potatoes. Feel free to leave the skins on if you prefer.

Boil the Potatoes: Add the potatoes to a large pot then fill the pot with enough water to cover the potatoes. Boil for 10-15 minutes or until tender.

Drain: Drain the potatoes and return them to the pot.

Add butter, cream, Boursin cheese, and Seasonings: Add the butter, heavy cream, Boursin cheese, garlic powder, salt, and pepper.

Mash Potatoes and Ingredients Together: Use a potato masher or electric hand mixer to mash until incorporated and creamy. Mash them to your desired consistency. Leave them chunky or make them smooth. However, be careful not to over-mix the potatoes!

Taste and Adjust: Lastly, taste and adjust the seasonings if needed.

Enjoy Warm: Finally, top with additional butter, if desired. Garnish with chopped parsley then serve the potatoes warm!

Tips and Variations

Here are some tips for making perfect Boursin mashed potatoes! I know you’re going to love them as much as my family does. The Boursin cheese takes the flavor and texture to the next level!

Yukon Gold Potatoes: Yukon gold potatoes are my absolute favorite potato to mash. They are buttery and creamy and perfect! Feel free to use red or russet potatoes, but you’re missing out if you don’t use Yukon gold, also known as yellow potatoes.

Peeling Potatoes: Peeling potatoes for mashed potatoes is a preference. You can peel half of them, all of them, or leave all the skins on. I like to leave some of the skin on because the skin packs in so many nutrients! I also love the added texture. The skin easily mashes in and you hardly even notice it. It’s great because it cuts down on prep time even more!

Extra Mix-Ins: Want to jazz things up a bit? Add in some diced green onions or chives. Another delicious mix-in would be chopped crispy bacon!

Double the Recipe: These Boursin mashed potatoes are undeniably a favorite at our house! I promise you will want to double the recipe so you have leftovers.

Storing Leftovers

These leftover boursin mashed potatoes are undoubtedly the best! The Boursin cheese keeps the potatoes nice and creamy. I’m such a potato-lover, finding leftover mashed potatoes in the fridge is one of my favorite things!

In the Refrigerator: Store leftover potatoes in an airtight container for up to 5 days.

To Reheat: When you are ready to eat your leftovers, take them out and heat them up in the microwave! Cook them on high for about 1 minute or until warmed through.

Combine Butter and Cream Cheese: Beat the softened butter and cream cheese on medium speed with a hand mixer or stand mixer for 1-2 minutes, until smooth and creamy.

Mix in Remaining Ingredients: Add the vanilla extract, powdered sugar, and salt and mix on low until incorporated. Increase the speed to high and beat for a couple of minutes until smooth. You may separate a small amount of frosting to tint green and orange to pipe carrots or just leave it all white. Use a spoon or a knife to spread frosting over each cooled cookie.

Tips and Tricks

A few extra ways to ensure that your carrot cake cookies turn out perfectly!

Shred Your Own Carrots: You can use the pre-shredded carrots from the store, but I find the best texture and flavor comes from large carrots that you shred yourself.

Don’t Overbake Your Cookies! Once the edges start to brown and the tops turn more matte instead of shiny, it’s time to remove them from the oven. You can let them cool on the cookie sheet for 2-3 minutes before transferring them to a cooling rack.

Use Pecans: If you don’t like walnuts but you still want some nuts in your cookies, replace them with toasted chopped pecans.

Storing Leftover Carrot Cake Cookies

Because of the cream cheese in the frosting, these cookies ought to be stored in the refrigerator in an airtight container. They will keep for up to 5 days. Lay them in a single layer, as they will stick to each other if stacked.

Can These Cookies Be Frozen?

Yes! The texture of both the cookies and the cream cheese frosting hold up well after being frozen. Pop your cookies in a freezer bag, they’ll stay good for up to 2 months. Just thaw overnight in the fridge before you enjoy them again!
