It’s made with minimal fresh ingredients without any weird additives that you can’t pronounce. Your desserts will have that amazing made-from-scratch flavor that simply can’t be beat. Now, all you need is this perfect pie crust recipe!

What is in Homemade Strawberry Pie Filling?

I love that this strawberry pie filling recipe is made with such simple ingredients! After just one bite, you will taste how much better homemade is and be so glad that you tried this easy recipe. See the recipe card below for complete measurements.

Strawberries: Fresh or frozen strawberries will work.

Granulated Sugar: Perfectly sweetens the filling and balances the tartness of the berries.

Clearjel: This is what thickens the filling to give it the perfect consistency. There is no substitution! See the note in the ‘Tips and Tricks’ section below for more information.

Water: Boiling water is combined with the sugar and Clearjel to get the thickness just right.

Lemon Juice: Adds fresh brightness and enhances the natural flavor of the fruit.

How to Make Strawberry Pie Filling

Follow these step-by-step instructions and you’ll see just how easy it is to make your own pie filling. You can even can it, if you’d like!

Blanch the Strawberries: Bring a small pot of water to a rolling boil. Blanch the strawberries by quickly plunging them into the boiling water for about 10-15 seconds before removing them to a bowl. Cover to keep warm.

Mix Sugar and Clearjel: In a medium saucepan or skillet, add the sugar and Clearjel and whisk to combine.

Add Boiling Water: Heat the cup of water in the microwave for 1 ½-2 minutes, until boiling. Whisk the boiling water into the sugar mixture and mix until combined. Heat over medium heat until thickened. Add the lemon juice and whisk until smooth. Continue whisking constantly and cooking until the mixture becomes less opaque, about 3-4 minutes

Stir Mixture with Strawberries: Remove from the heat and stir into the blanched strawberries. You may add a few drops of red food coloring if you would like it to be a darker red, as the strawberries lose a lot of their color, but this is optional.

Cook: If you will be using the filling without canning it first, return the mixture to the pot and cook over medium heat for 4-5 minutes, until it bubbles and the gel is clear.

To Can the Filling

Prep the Jars: If you will be canning it, make sure your jars are clean and warm. Add the filling to the prepared jars, leaving ¼ inch head space. Wipe the rims clean of any filling and then wipe them with white vinegar. Add the lid and screw on the band fingertip tight.

Heating the Jars: Place the filled jars on a rack in your canning pot, being sure there is 1 inch of water over the tops. Bring to a low boil. Process for 30 minutes before turning off the heat. Let the jars sit in the water for 5 minutes before removing them to a towel, where they should cool for 24 hours.

Check Jars and Store: Check the lid of each jar to make sure it is sealed and not flexing at all. Store in a cool place until ready to use.

Tips and Tricks

Follow these simple tips for the best strawberry pie filling you’ll ever taste! Once you give this homemade recipe a try, you’ll never want store-bought canned pie filling again!

Do I have to use ClearJel? YES! There is no substitute. Clearjel is a modified food starch that will not break down after canning, being heated more than once, or over time. It is an absolute must for this recipe. Other thickeners, such as flour or cornstarch, will end up breaking down and your pie filling will turn out runny. ClearJel can usually be found in large grocery stores with their canning supplies or can be purchased online.

Do I have to Blanch the Strawberries? You don’t have to blanch the berries, but this helps sterilize them before making your filling. If you would like to skip this step, you may skip it but your berries won’t be as sterilized as they would with the blanching.

Can I use Frozen Strawberries? Yes, when using frozen strawberries, you should let them thaw to room temperature before using them. Save the liquid from thawing and top it off with water until you have the 1 cup of water called for in the recipe card. You do not have to blanch thawed strawberries for this recipe.

Why use Bottled Lemon Juice? The acidity in fresh lemons varies from lemon to lemon, so it is difficult to get consistent acid content. To safely can your strawberry pie filling, it is best to use bottled lemon juice because the acidity is the same from bottle to bottle. If you are making the filling and do not plan to can it, fresh lemon juice will be fine.

Storing Leftover Strawberry Pie Filling

Here are the various options for storing your strawberry pie filling:

Without Canning: Store the strawberry pie filling in an airtight container in the refrigerator for up to 3 days. In this time, you can use it as a topping or to fill baked pie crusts or pastries.

Canned: Store canned strawberry pie filling in a cool, dark place for up to 12 months. Make sure to check that the seal has not broken and the lid cannot flex before opening and using.

To Freeze: You can freeze the filling. Add it to a large freezer bag and keep for up to 3 months. To thaw, refrigerate overnight.

What’s in Slow Cooker Chicken Cordon Bleu?

Cream of Chicken Soup: Provides rich, comforting flavor.

Dijon Mustard: Gives a slight tang and depth of flavor.

How to Make Chicken Cordon Bleu in the Crockpot

If you love chicken cordon bleu as much I do, you will love how easy this is to throw into the crockpot!

Prep: Spray the bowl of a 4 or 6-quart slow cooker with pan spray.

Whisk: Whisk together the milk, cream of chicken soup, Dijon, and lemon juice. Spread about 1 cup of the mixture in the bottom of the crockpot.

Add Meat and Cheese: Add the chicken to the crockpot, then top with the ham and shredded cheese.

Add Stuffing Mix: Top with the rest of the soup mixture. Cover with the stuffing mix and drizzle with butter.

Cook: Cook on low for 5-6 hours or on high for 2-3 hours.

Add the soup mixture and chicken breasts.

Layer on the ham pieces.

Sprinkle on the shredded cheese.

Pour remaining soup mixture on top.

Sprinkle on the dry stuffing mix.

Pour on melted butter and cook.

Tips for Slow Cooker Cordon Bleu

Can I use chicken thighs instead? Yes! Boneless, skinless chicken thighs will work as a flavorful alternative to chicken breasts! You can use all breasts, all thighs, or a mixture of the two as long as you’ve got 3 pounds of chicken.

Cut it into cubes: You can keep the chicken breasts whole, or you can cut it into 1-inch cubes for easier serving.

Fresh or bottled lemon juice? I like to try to use fresh lemon juice anytime that I can. Fresh lemons always have better flavor and will add the perfect amount of zing to the cordon bleu sauce.

Crockpot Size: If you use a larger crockpot, (7-8 quarts) your cooking time may be a bit shorter than the recipe calls for.

Can I make it gluten-free? Yes! You can easily make this a gluten-free recipe by swapping out the stuffing mix for your favorite gluten-free stuffing mix!

Storing Leftovers

In the Refrigerator: Store your slow cooker chicken cordon bleu leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in 30-second increments in the microwave.

Make it Ahead of Time: You may prepare the items in the crockpot the night before except for the stuffing and butter. Cover with plastic wrap or foil and place in the refrigerator. In the morning, add on the stuffing, drizzle it with butter and cook on low for 5-6 hours or on high for 2-3 hours.

Rice Papers: You’ll need 12 rice papers for wrapping the filling. The standard 22 cm size will work best.

How to Make Spring Rolls

Loaded with plenty of fresh, crisp vegetables these rolls not only have a beautiful presentation but they also taste amazing! Here are step-by-step instructions for how to create the ultimate appetizer or snack!

Prep

Cook the Noodles: Cook the vermicelli according to the package directions, rinse in cold water and carefully toss in the sesame oil to keep the noodles from sticking together.

Chill the Noodles: Place the cooked noodles in a covered bowl in the fridge until the rest of the ingredients are ready to assemble.

Prep the Veggies: Prepare all the vegetables, leaves, and lettuces. Keep them all in separate bowls to prepare a work station. Remove the noodles from the fridge.

Prep the Work Area: Fill a pie dish or shallow bowl with warm water. Make sure you have a clean working surface next to the water and fillings such as a cutting board or flat platter.

Moisten the Rice Paper: Take a rice paper out and submerge it in the dish of water until it is just pliable, about 12-15 seconds. Remove the rice paper from the water and allow any excess water to drip off. Place the rice paper on the work surface.

Assemble

Assemble: Take a small bundle of the vermicelli and lay it on the lower ⅓ of the rice paper followed by the cilantro, mint, cabbage, romaine, carrots, and cucumber. These ingredients should fill about 12 papers so split the ingredients accordingly.

Roll: Roll the paper up over the ingredients as tight as you can without tearing the sheet until you’ve reached halfway up the paper. Fold the sides of the rice paper in on itself and continue rolling the rest of the rice paper up until you have a tight cylinder.

Continue Rolling and Serve: Continue this process until all the fillings have been used. You should get about 12 spring rolls. Serve fresh with Sweet Chili Sauce.

Cook and drain the noodles.

Submerge the rice paper in water.

Fill the center of the moistened rice paper with the spring roll ingredients.

Fold in the sides and roll the spring roll tightly.

Tips and Variations

Here are my top tips and some variation ideas for the best spring rolls! You’re going to want to make them over and over again!

Sauce: I like the sweet chili sauce for this recipe but another great dipping sauce for these spring rolls is this Peanut Sauce recipe.

Add Protein: If you aren’t worried about keeping this recipe vegetarian, feel free to add protein to the rolls such as cooked shrimpsteaktofu, or chicken!

Don’t Overstuff: Don’t add too much filling to the rice paper or it could easily fall apart when you pick it up.

Don’t roll them too tight: Be very gentle with the wraps once they have softened. You want to roll the spring rolls tight but avoid tearing the papers. It always takes me a couple rolls to get it right, but once you have the hang of it it’s a breeze!

Other Wraps: You can also use brown rice vermicelli and brown rice wraps for this recipe!

Storing Leftover Spring Rolls

This recipe is best enjoyed fresh, but you can store leftovers in the fridge in an airtight container for up to 4 days.

For best results, I like to line the storage container with a damp paper towel, then place the spring rolls inside the container and cover with another damp paper towel before topping with the lid.

It uses a storebought rotisserie chicken, so all you have to make is the buffalo enchilada sauce. The addition of the buffalo enchilada sauce takes classic chicken enchiladas to the next level! The sauce steals the show with the bold buffalo flavors that add the perfect kick. The center is creamy, cheesy, and packed with chicken…just how every enchilada recipe should be.

Enchiladas are a go-to dinner in my household! We all love them, and there are so many ways to change the flavors and ingredients. Some of our favorites are these white chicken enchiladas, this healthier version of chicken enchiladas, or flavorful cream cheese enchiladas.

Ingredients You’ll Need

With less than 10 ingredients you can make these easy buffalo chicken enchiladas! Using rotisserie chicken or leftover chicken makes the assembly so fast! Just get ready because they’re so delicious, they won’t last long!

Shredded Chicken: Rotisserie works great here, but you can also use leftover chicken from another meal.

Canned Diced Tomatoes: Sometimes I use canned diced tomatoes with green chiles for more flavor because I LOVE green chilies.

Canned Tomato Sauce: The base of the sauce!

Diced Green Chiles: The green chiles add so much flavor to these enchiladas.

Buffalo Sauce: Use your favorite buffalo sauce here! We love Frank’s!

Cream Cheese: Makes the sauce creamy and delicious!

Tortillas: Use flour, corn, or whole wheat tortillas!

Monterey Jack: Feel free to use cheddar cheese or a Mexican cheese blend if you prefer.

Optional Toppings

Blue Cheese Dressing: Drizzling blue cheese dressing on top makes any buffalo chicken recipe complete!

Green Onions: Added flavor and color.

Cilantro: A pretty and tasty texture!

Blue Cheese Crumbles: If you love blue cheese then pile it on! So yummy!

Buffalo Chicken Enchiladas Recipe

This easy buffalo chicken enchiladas recipe comes together in just 10 minutes! Make the easy sauce, mix in cream cheese and chicken, and get to rolling the tortillas. These will be in the oven in no time at all!

Sauce

Preheat/ Prepare Baking Dish: Preheat oven to 350 degrees Fahrenheit. Spray a 9×13 baking dish with cooking spray and set aside.

Make the Sauce: In a medium saucepan, combine the diced tomatoes, tomato sauce, green chilis, and buffalo sauce then bring to a simmer. Pour 1/2 cup of the sauce mixture into the baking dish to coat the bottom. Then, reserve 2/3 cup of the sauce for the top and set aside.

Add Cream Cheese and Chicken: Add the cream cheese to the remaining sauce mixture in the saucepan. Heat on low and stir until the cream cheese melts into the sauce. Add the chicken and stir to combine.

Make the sauce.

Place sauce in the baking dish and reserve
sauce for the top.

Add the cream cheese to the remaining sauce.

Assembly

Roll the Enchiladas: Place about 1/4 cup of the chicken mixture off center to each tortilla. Roll up and place in the prepared pan seam side down. Repeat with remaining tortillas.

Top With Remaining Sauce and Cheese: Top with reserved 2/3 cup of sauce and the Monterey jack cheese.

Bake: Bake the buffalo chicken enchiladas for 15-20 minutes until the cheese is bubbly.

Garnish and Serve: Serve with optional toppings and enjoy!

Roll the enchiladas and place them in the prepared dish seam side down.

Repeat with the remaining tortillas and fill the pan.

Top the rolled tortillas with the reserved sauce.

Sprinkle the shredded cheese on top and
bake until bubbly.

Buffalo Chicken Enchilada Tips and Variations

Make these buffalo chicken enchiladas your own! Here are a few ideas on how to customize and perfect them.

Warm The Tortillas: Before you assemble the enchiladas, warm up the flour tortillas. This makes them more pliable and less likely to tear when rolling. Easily warm them in the microwave for 10-15 seconds until they become soft and easier to work with. You can also use corn tortillas or whole wheat tortillas if you prefer.

Swap Out Chilies: If you want more heat, then swap out the green chilies for diced jalapenos, chipotle peppers, or serrano peppers.

More Toppings: Instead of blue cheese dressing, drizzle the enchiladas with ranch dressing. Try topping the enchiladas with sliced avocados or salsa!

Serve With: These enchiladas are great on their own, but you can also serve them with grilled corn, black beans, or Mexican rice.

Storing Leftovers

These buffalo chicken enchiladas are super easy to store and heat up later for a quick and easy meal. I doubt you’ll have any leftovers, but just in case, here’s how to keep them fresh!

In the Refrigerator: Store leftovers in an airtight container for up to 4 days. When ready to enjoy your enchiladas, heat them in the microwave until warmed through.

In the Freezer: Wrap enchiladas in aluminum foil and then place in a freezer bag. They will stay good in the freezer for 2 months. Before serving, thaw overnight in the fridge, then reheat them in the oven for 15-20 minutes at 350 degrees Fahrenheit.

Asparagus is one of my favorite vegetables! This recipe inspiration came from one of my very first recipes on the blog, this parmesan asparagus. I love serving it with our dinners because I throw it in the oven and it takes less than ten minutes to cook. It gets a crisp edge on the outside, and the asparagus is nice and tender on the inside. This asparagus was full of such amazing flavor and I LOVED the lemon parmesan garlic flavor that coated the outside. I could have eaten the entire pan by myself.

Making roasting asparagus couldn’t be easier! I am always looking to find new flavor ideas when I cook my asparagus. Since I love lemon, parmesan cheese, and garlic, I decided to add them all! Roasted Lemon Parmesan Garlic Asparagus Ingredients

This roasted lemon parmesan garlic asparagus has very few ingredients! It makes for an easy side dish when you’re short on time. Grab a bundle of asparagus at the grocery store and let’s take it up a notch!

Asparagus: Be sure to trim off the white ends of the asparagus before roasting.

Olive Oil: Adds moisture as the asparagus roasts.

Garlic: Fresh minced garlic has the best flavor!

Parmesan Cheese: Grated or shredded will work. I love the flavor of parmesan but asiago cheese would be delicious too!

Lemon: Freshly squeezed lemon is a must! It brightens the flavors and is unexpectedly tasty.

Salt and Pepper: I love the taste and texture of coarse salt and pepper in this asparagus recipe!

Roasted Asparagus Recipe

Get ready to make the easiest and most impressive side dish! This roasted asparagus will steal the show and you’ll want to serve it with every meal. Follow the recipe card below for step-by-step instructions.

Preheat Oven/ Arrange Asparagus: Preheat oven to 400 degrees Fahrenheit. Arrange the asparagus in a single layer on the baking sheet.

Toss With Olive Oil and Salt and Pepper: Toss the asparagus with the olive oil then sprinkle with salt and pepper.

Roast: Roast for 8-10 minutes or until the asparagus is crisp on the outside and tender in the center. 

Toss With Garlic, Parmesan, and Lemon Juice: Toss in the garlic, parmesan cheese, and lemon juice then serve immediately.

Drizzle the asparagus with olive oil.

Season with salt and pepper then roast.

From picking fresh veggies to switching up seasonings, here are a few easy tips to make your roasted asparagus as delicious as possible!

Picking Asparagus: Pick the freshest stalk possible! The perfect stalk should be a vibrant green color. If it’s dull, then it is likely overripe. The stalks should be firm to the touch and not flimsy. Choose a stalk with a uniform size so that each piece cooks at the same rate.

Flavor Variations: Although salt and pepper are my go-to seasonings for asparagus, switch it up with lemon pepper seasoning or garlic salt! Sometimes if I’m feeling fancy, I’ll add a dash of Italian seasoning to add flavor. Try adding some lemon zest to bring out the lemon flavor even more!

Toppings: Try garnishing the top with some chopped cooked bacon, slivered almonds, or pine nuts. And if you like a little kick then add a sprinkle of red pepper flakes!

Do I Need to Trim My Asparagus? I always recommend trimming off the white ends of the stalk because it is very tough and bitter. Trimming also helps to make each stalk a uniform size.

Roasted Lemon Parmesan Garlic Asparagus Leftovers

It’s so easy to store your leftover asparagus. Just heat it up and enjoy it another day! Follow my tips below for storing and reheating leftovers…that is if you have any!

In the Refrigerator: Store the roasted and cooled asparagus in an airtight container for up to 3 days.

To Reheat: Using an air fryer is always my favorite way to reheat leftover veggies. Pop the asparagus in the air fryer for 2-3 minutes at 350 degrees Fahrenheit. You can also reheat them in the oven for 3-5 minutes at 350 degrees Fahrenheit.

What’s in a Twinkie Cake?

It looks like a long list but many of the ingredients are pantry staples that you probably already have in your kitchen. You can find all of the exact measurements are in the recipe card below.

Cake

Cake Flour: The base of the cake and what will make it so soft and tender.

Granulated Sugar: Perfectly sweetens the cake without overwhelming the vanilla flavor.

Baking Powder and Baking Soda: Ensures the cake bakes properly with just enough lift.

Salt: Enhances the flavor.

Buttermilk and Milk: A combination of the two for maximum moisture and fluffiness.

Vanilla Extract: For that signature vanilla flavor.

Vegetable Oil: Adds moisture and richness to the cake.

Cream Filling (Ermine Frosting)

How to Make a Homemade Twinkie Cake

Even though there are quite a few steps, they are simple and straightforward. Follow the instruction and you’ll end up with a perfect dessert that’s sure to become a favorite!

Cake

Prep: Preheat the oven to 350 degrees Fahrenheit and spray a 9×13 inch baking pan with pan spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients: In a large bowl, whisk together the buttermilk, milk, vanilla, oil, and eggs. Add the dry ingredients to the wet ingredients and whisk until combined.

Bake: Pour the batter into the prepared pan and bake for 35-40 minutes, until a toothpick comes out clean from the center of the cake.

Cool and Slice: Let the cake cool completely before inverting on a cooling rack. Carefully slice the cake through the center, so the top and bottom create two layers.

Add Filling: After the cream filling has been made, spread an even layer of filling between the two layers of cake, smoothing along the sides for clean edges.

Heat Flour Mixture: Add the flour, sugar and milk to a pan. Cook over medium heat while whisking constantly until thick like pudding, about 10 minutes.

Chill: Remove from the heat and add to a heat-proof bowl or quarter sheet pan. Cover with plastic wrap so the plastic touches the top of the mixture and prevents a film from forming. Chill in the fridge for 40 minutes

Whip Butter: Add the room temperature butter to a stand mixer and whip with the whisk attachment for about 8 minutes, until the butter is light and fluffy.

Combine Flour Mixture and Butter: Add the flour mixture to the butter one scoop at a time until it is all incorporated, scraping down the sides and bottom of the bowl as needed.

Beat to Finish: Scrape down the sides and bottom of the bowl and switch to the paddle attachment. Add the vanilla and salt and beat on medium-high for 10-13 minutes, until smooth and fluffy.

Twinkie Cake Tips

Let me help you make the best Twinkie dessert ever! Follow my tips and tricks below to give you the most success.

Using All-Purpose Flour: You may use all-purpose flour instead of cake flour, or you can make your own cake flour. Measure 2 ¼ cup of all-purpose flour and then remove ¼ cup + 1 ½ teaspoon of the flour. Replace it with ¼ cup + 1 ½ teaspoon of cornstarch and whisk until it’s fully combined with the flour.

Baking Pan: Use a light-colored metal baking pan for the most even bake on your cake! Ceramic or glass will take longer to bake and dark metal will bake faster on the edges than in the middle.

Lining the Pan: Line the baking pan with parchment paper to make it easy to remove the cake from the pan. Be sure you have at least a 1-inch overhang of parchment on either side of the pan, and be sure to spray the parchment paper with pan spray

Use Butter: The vegetable oil may be replaced with ½ cup melted unsalted butter, but the texture of the cake will be slightly dense and the cake may not rise as much.

Making the Frosting: Avoid soupy frosting by cooking the flour long enough! When it is ready to be chilled, it should be thick like pudding or greek yogurt. If it is still runny and doesn’t hold its shape, cook it a little longer. Let it cool completely before adding it to the whipped butter.

Cream Filling Tip: Be sure to whip the butter until pale and fluffy before adding spoonfuls of the flour mixture. Scrape down the sides and the bottom of the bowl several times to make sure the frosting is fully incorporated.

Storing Leftover Cake

If you have leftover Twinkie cake, it definitely won’t last long! It’s so irresistible, you won’t be able to stop taking bites! Follow my tips below for storing leftover cake in the refrigerator and freezer.

In the Refrigerator: This cake is best stored in the fridge for up to 3 days. Store in an airtight cake container or wrapped in plastic wrap.

In the Freezer: Individual Twinkie cake slices can be wrapped in plastic wrap and then placed in a ziplock bag and frozen for up to 3 months. Let the slices thaw overnight in the fridge before unwrapping them. The whole cake can be frozen, too! I recommend setting it on a parchment-lined baking sheet and freezing for 3-4 hours before removing it from the freezer and wrapping the whole thing in 2-3 layers of plastic wrap and then a layer of foil. Unwrap the cake and place on a parchment-line baking sheet or a serving plate before thawing for 2-3 hours in the refrigerator.

Prep: Preheat an oven to 350 degrees Fahrenheit and grease a 9×13-inch baking dish with softened butter. Be generous with the butter as it will add to the flavor of the casserole.

Make the Egg Custard: Dice the croissants into about 1-inch pieces and set aside. In a large bowl, whisk together the eggs, half and half, garlic powder, paprika, salt and pepper.

Combine the Ingredients: To the bowl of eggs add the croissants, diced ham, and the cheddar and Swiss cheese. Stir to combine everything well.

Use Day-Old Croissants: Just like when making French toast, we recommend using croissants that are 1-2 days old. Stale croissants will better absorb the egg mixture and the end result will have a better texture and taste.

How to Crisp Up Fresh Croissants: If you only have fresh croissants, cut them into cubes and place them on a baking sheet. Bake at 350 degrees Fahrenheit for 8-10 minutes, watching them closely so they don’t burn. Allow the croissant pieces to cool completely before using in the recipe.

Add-ins: You can add any of your favorite breakfast staples to this casserole, cooked and chopped bacon, chopped bell peppers, sausage, or diced jalapeño for a spicy kick!

How Many Croissants: For the croissants the number you will use will vary depending on the size of the croissant. Once you’ve cut the croissants up place them into the pan you will be using to make sure it fills the pan well, they should mostly fill the pan on their own.

Cheese: If I have the extra time, I like to shred my cheese from the block so that it tastes more flavorful and melts into my casserole better.

You can totally make this ahead or store your leftovers so that you can enjoy them later! Follow these tips and you can have a ready to go breakfast or lunch option for days!

In the Refrigerator: Once the casserole has cooled, store it in an airtight container in the fridge for up to 4 days.

Reheating: You can reheat an individual serving by microwaving it for about 45 seconds or until it’s warm! Or, you can reheat the entire pan. Preheat your oven to 350 degrees and cook it (covered with foil) for 10-15 minutes and until it is heated through.
